Organic Herb Chicken Soup Recipe with Freeman Herbs

Ingredients
Chicken
- 2 boneless, skinless chicken breasts (about 0.7 kg)
- 3 cups chicken broth
- 3-4 Freeman Herbs Organic thyme sprigs
- 2 Freeman Herbs Organic oregano springs
- 1 Freeman Herbs Organic rosemary stalk
- 2 garlic cloves, crushed
- 1 1/2 tsp salt
- A few grinds of fresh black pepper
Soup Base
- 2 tbsp olive oil
- 1 yellow onion, finely diced
- 2 large carrots, peeled and chopped
- 3 celery stalks, chopped
- 3 cups chicken broth
- 1/2 cup Freeman Herbs Organic parsley, chopped
- 1/4 cup Freeman Herbs Organic dill, chopped
- 5-6 leaves Freeman Herbs Organic basil, chopped
- Cooked pasta, rice or bread of your choice
Instructions

Step 1
Add chicken breasts, chicken broth, thyme, oregano, rosemary, garlic, salt and black pepper to a medium sauce pan. Bring it to a boil then reduce heat to low, cover and gently simmer for 1 hour or until the chicken is fall-apart tender. -
Step 2
Warm olive oil on medium heat in a large pot. Add onion and sauté for approximately 15 minutes, until caramelized. Add celery and carrots then remove from the heat. -
Step 3
Transfer chicken breasts to a plate and shred into bite-sized pieces. Strain the cooking liquid into a large bowl. -
Step 4
Add the shredded chicken, 3 cups of chicken broth and 1 cup of the cooking liquid to the pot of vegetables. Add cooking liquid by the 1/2 cup, tasting as you go, and more black pepper until the soup is seasoned to your liking. -
Step 5
Bring to a boil and cook for another few minutes, until the vegetables have softened. Stir in the basil, parsley and dill. Add cooked pasta, rice or serve with bread.
