Organic Herb Chicken Soup Recipe with Freeman Herbs

Ingredients

Chicken

  • 2 boneless, skinless chicken breasts (about 0.7 kg)
  • 3 cups chicken broth
  • 3-4 Freeman Herbs Organic thyme sprigs
  • 2 Freeman Herbs Organic oregano springs
  • 1 Freeman Herbs Organic rosemary stalk
  • 2 garlic cloves, crushed
  • 1 1/2 tsp salt
  • A few grinds of fresh black pepper

Soup Base

  • 2 tbsp olive oil
  • 1 yellow onion, finely diced
  • 2 large carrots, peeled and chopped
  • 3 celery stalks, chopped
  • 3 cups chicken broth
  • 1/2 cup Freeman Herbs Organic parsley, chopped
  • 1/4 cup Freeman Herbs Organic dill, chopped
  • 5-6 leaves Freeman Herbs Organic basil, chopped
  • Cooked pasta, rice or bread of your choice

Instructions

  • Step 1

    Add chicken breasts, chicken broth, thyme, oregano, rosemary, garlic, salt and black pepper to a medium sauce pan. Bring it to a boil then reduce heat to low, cover and gently simmer for 1 hour or until the chicken is fall-apart tender.
  • Step 2

    Warm olive oil on medium heat in a large pot. Add onion and sauté for approximately 15 minutes, until caramelized. Add celery and carrots then remove from the heat.
  • Step 3

    Transfer chicken breasts to a plate and shred into bite-sized pieces. Strain the cooking liquid into a large bowl.
  • Step 4

    Add the shredded chicken, 3 cups of chicken broth and 1 cup of the cooking liquid to the pot of vegetables. Add cooking liquid by the 1/2 cup, tasting as you go, and more black pepper until the soup is seasoned to your liking.
  • Step 5

    Bring to a boil and cook for another few minutes, until the vegetables have softened. Stir in the basil, parsley and dill. Add cooked pasta, rice or serve with bread.
