Vegan Chili with Organic Beans from Cullen’s Foods

If you haven't tried Cullen's Foods 100% Ontario grown organic beans before, why not try multiple types in one go! This hearty Vegan Chili recipe includes Cullen's Kidney, Black, and Navy beans, to create a delicious, satisfying, and protein full meal.

Beans – Of each type, 1 can or 250g dry beans cooked and cooled. Reserve some bean liquid.

  • Cullen’s organic Black Turtle Beans
  • Cullen’s organic Navy Beans
  • Cullen’s organic Dark Red Kidney Beans

Other ingredients

  • 2 large onions, chopped
  • 4 cloves garlic, chopped
  • 2 chipotle peppers in adobe sauce, chopped
  • 2 cups corn (frozen or canned)
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 850mL can diced tomatoes
  • 850mL can pureed tomatoes
  • 156mL can tomato paste
  • 2 tablespoons olive oil
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 bay leaf
  • 1 tablespoon dried oregano
  • 1 teaspoon smoked paprika or a few dashes of liquid smoke
  • Salt and pepper to taste

Serving suggestion: Serve with shredded cheddar cheese, sour cream, chopped green onions, and tortilla chips or garlic bread

Instructions

  • Step 1

    If using Cullen's Foods dry beans, prepare as preferred and let cool. Reserve the cooking liquid and set aside.
  • Step 2

    In a heavy bottomed pot on medium high heat, add oil, onions and peppers. Sauté until onions are slightly translucent and peppers are slightly softened, around 3-4 minutes.
  • Step 3

    Add garlic and stir until fragrant, around 1 minute.
  • Step 4

    Add the cumin, coriander, and oregano and stir to toast the spices. Stir in the chipotle peppers and bay leaf.
  • Step 5

    Add tomato paste and cook for 2-3 minutes.
  • Step 6

    Add the tomatoes, corn, and the Kidney, Black, and Navy beans.
  • Step 7

    Stir in the smoked paprika or liquid smoke. Add some salt and pepper (add more to taste later).
  • Step 8

    Lower the heat and simmer for 1 hour until flavours blend. Add reserved bean liquid, as needed, to prevent it from drying out.
  • Step 9

    Adjust salt and pepper as needed
  • Step 10

    Serve and enjoy with shredded vegan/regular cheddar cheese, vegan/regular sour cream, chopped green onions, and tortilla chips or garlic bread.
